It is still delicious and I will make it again.I wonder if I can replace some of the white bread flour with wholewheat bread flour??? I’m just trying to make it a little healthier…Next time I will try 1 1/2 cups of rye and no white in the soaker and all white bread flour in the flour mix.Remove pan from the heat and stir in 1/2 cup room-temperature milk.Stretching the dough can be a challenge (and sometimes a contest).

If you cannot find malt syrup, substitute 4 teaspoons of molasses.I’ve been making rye bread consistently, following this recipe, and sometimes taking shortcuts.Tried the rye this weekend and it was fantastic, it took some time but was over all very easy to make.

I don’t know.This is a lot of time — 3 rises! — for one loaf of bread.The crust and crumb was good but it could have used more salt (I used kosher, not table).I also didn’t get the oven spring I was looking for, ending up with a large flat loaf about 2″ high.(I was tempted to use my Dutch oven a la no-knead but ended up baking it on a sheet.Next time — if I don’t find a less time-consuming recipe — I will definitely go that route.).The one drawback is that I am forced to eat the whole thing all alone.Recipes » Food Bank of Central New York.
